Cream cheesecake with apples

Hey- hey!
I hope that by now most of you have already baked apple cake. If not, now it's your turn.
When I started testing this recipe, I came to the conclusion that I have never made apple cake with cream cheese. When I think of apple cake, the first thing that comes to mind is cottage cheese. I corrected that mistake and made it with cream cheese this time.
This cake is a truly wonderful combination of apples and creamy cream cheese and will definitely please both big and small sweet tooths.

Take the cream cheese and eggs out of the refrigerator 1.5-2 hours before baking.
I used a 22 cm cake pan for this cake. If you want to make it in a 24 cm diameter pan, multiply the ingredients for the cake base by 1.25.
Let's start with the top, or the crumb coating.

Crumble cover

  • wheat flour 100g
  • brown sugar 80g
  • 70g cold butter

Mix the sugar with the flour.
Chop the cold butter into small cubes.
Quickly rub the ingredients between your fingers until they resemble crumbs. You can do this with rubber gloves, then the heat from your hands will not reach the butter as quickly and the butter will not melt.
Leave it in the refrigerator to wait.

Apple mixture

  • peeled apples 250-300g
  • cinnamon 6g
  • toffee candy 150g (Kalevi kiss-kiss, orange)
  • butter 20g
  • whipped cream 20g

 

Peel and core the apples, chop them.
Mix the apples with cinnamon.
Melt the toffee candies with the whipped cream and butter in a saucepan.
Add the toffee to the apples and mix until smooth.

Cake base

  • digestive biscuit 160g
  • butter 60g
  • honey 20g

Prepare a baking sheet with baking paper and a 22 cm cake tin.
Preheat the oven to 180 degrees.
Crush the biscuits and melt the butter and honey if necessary.
Mix together and press into the bottom of the cake tin and a little up the sides of the tin.
Bake for 10 minutes.

Once the cake base is ready, remove the base from the oven, reduce the oven temperature to 160 degrees, and place a heatproof dish with water in the bottom of the oven. (This is not necessary for the curd cake.)

Cream cheese cream

  • 600g cream cheese
  • sugar 140g
  • sour cream 150g
  • cornstarch 10g
  • 3 eggs (size M)
  • vanilla

Mix the cream cheese on low speed until smooth (about 1 minute).
Add the sugar and mix for another minute.
Mix together the cornstarch, sour cream and vanilla.
Add to the cream cheese and mix until smooth.
Beat the eggs and add to the cream cheese mixture, mix until smooth.
Pour onto the pre-baked cake base.

Ps! If you use cottage cheese, you can simply mix all the ingredients together.

Evenly spread the apples and crumble topping on top.
Bake at 160 degrees for 1 hour and 15-20 minutes.
The finished cheesecake will still be slightly gooey in the middle.
Turn off the oven and leave the cake in the oven for 30 minutes to 1 hour.
Let it cool to room temperature and then chill completely in the refrigerator.
