Homemade fondant and decorations

Since I no longer take cake orders, I don't have any fondant left at home. When I needed to quickly make cupcake decorations for a baby shower, I had to come up with something fast. So I decided to make homemade marshmallow fondant – and it was the best decision!

It's basically made with just two ingredients (marshmallows and powdered sugar), costs only about 3$, and tastes better than the store-bought.

I share step-by-step recipe and tips on how to create perfect decorations from this soft mass and how to use them on cakes or cupcakes.

This recipe makes about 400g of homemade fondant.

You need:

Marshmallows 150g (white)
Icing sugar 300g (sifted)
Water 1.5 tbsp>
For greasing: a little cooking oil or coconut fat
Food coloring if desired (gel coloring preferred)

  • Put 150g of marshmallows in a bowl with 1.5 tbsp of water (you can grease the bowl with fat first, then it will be easier to remove the mass from the bowl later).
  • Melt in the microwave (in 10-second increments) or in a water bath until the mixture is smooth.
  • Add about 200g of powdered sugar directly into the warm mixture and mix with a spatula or spoon until smooth.
  • Sprinkle the remaining 100g of powdered sugar on the table, grease your hands with coconut fat and knead the mixture.

Ps! If the mixture still feels too sticky after adding 300g (it depends on the marshmallows), you may need to add a few more spoonfuls of sugar, but keep in mind that the more sugar you add, the drier the mixture will be. You can also try oiling your hands again before adding the sugar (then it won't stick as much). 

  • If you wish, you can also color the fondant. Gel colors mix most easily with the fondant, add a small drop at first.
  • Wrap the finished fondant tightly in cling film. I kept them in the fridge for about half an hour and let them “rest”, this makes it easier to roll the mass and shape the decorations. Otherwise, store the fondant at room temperature, in addition to cling film, put it in a freezer bag. Keep in mind that they will stay soft for a couple of weeks at best if they are not exposed to air.

Making decorations

You can also make simpler decorations with this fondant. This fondant is not suitable for heavier and larger figures because it is too soft. You can make the fondant decorations a few days in advance, so they have time to dry and harden, making them easier to use. Simply leave the decorations to air dry at room temperature.

  • This time I made decorations for cupcakes. For them, I also made round circles under each detail to make the decorations look nicer and straighter.
  • For this, I sprinkled cornstarch on the table and rolled it out thinly, then cut circles 6cm in diameter.
  • Of course, it is easiest to make decorations if you have silicone molds. Sprinkle cornstarch inside the mold so that the fondant does not stick. Take a piece of fondant that is the same size as the mold and press it firmly into the mold. Cut off the excess with a knife. Carefully remove from the mold and leave on a stand or table to “dry”. I also used the mold to make buttons.
  • You can use edible glue or just water to glue the decorations together. I brush a minimal amount of water onto the decoration, press down gently, and leave to dry.
  • I also made decorations with cutters - clouds, baby clothes and triangles for the flags. I also shaped small balloons and strings for the bears.
  • If you wish, you can use powdered food color to add a light shadow, for example, I added black dots to the bear's eyes with gel paint.
  • Since the fondant will melt on wet creams, you can't put them directly on top of cream cheese frosting. You can put the sugar mass decoration directly on top of chocolate or buttercream-based creams.
  • For the cream cheese frosting I brush a thin layer of white chocolate or icing under the decoration. If you have light decorations, don't use dark chocolate, it will show through.
